Writing Styles and their issues

So, when I write a story, I know roughly how it's going to go. I know how it starts, how it ends, and middle points along the way. I don't always know what's going to happen in between. It's a road trip with a LOT of side-trips.
however.
Every now and then, a character will react in a way that feels normal for the story, but throws a wrench into the bigger plan. THEN I have to change things around. It's a pain!... but the story always feels better for it anyway :D
